Sikhae is a perfect drink to relieve one¡¯s thirst after having
eaten a lot on festive days. In the old days our ancestors
drank sikhae to help a full stomach digest food after a big
meal.
Also, when it was served, they garnished it with pine
nuts
and let them float on sikhae in winter to prevent sudden
sickness caused by drinking a cold drink too quickly, which reflected their wisdom of life.
Sikhae is made using the following process Glutinous rice or
rice is fermented by the action of the diastatic enzyme in
malt, and produces a unique sweet taste and flavor. |

Sujeonggwa, also called sujeongwa, is a traditional drink
add cinnamon, ginger and whole pepper to water, and boil
it down. Add sugar and cool it down.
Garnish it with pine nuts, a dried persimmon and a pear. Sujeonggwa served at royal court banquets in the Joseon
Dynasty era was made of pomegranates, citrons, Japanese
potatoes, ginger, junsi, geonsi garyun, duchung, sansa and
cherries.
Honey was used as a sweetener, pine nuts as a garnish,
and omija and yeonji as food colors. |
